Si scioglie il sale in poca acqua quando questo va inserito a fine impasto, negli altri casi non c'è bisogno.

Avrei pero' ancora qualche dubbio:

1. Perche' sconsigli le 20 ore di lievitazione? mi sono rifatto alla seguente ricetta di P. Giorilli che propone tra le 18 e le 22 ore di lievitazione.
C'e' per caso qualche accorgimento particolare da tener presente quando si lavora con le lunghe lievitazioni?

Per quanto riguarda l'acqua salata da non sciogliere nel poolish, ne ero consapevole; cio' che effettivamente faccio e' aggiungere meta' della rimanente farina, dopodiche' aggiungo l'acqua salata, dopodiche' finisco di mettere farina. In questo modo spero di non stordire il lievito.

Il motivo per cui sciolgo il sale nell'acqua e' che mi hanno detto che la salatura viene piu' uniforme. Ma e' vero?
(se la salatura viene uniforme anche senza scioglierlo in acqua, lo metto direttamente alla fine e buonanotte).

Grazie mille innanzitutto per il tempismo e la precisione delle tue risposte. Ti descrivo il mio metodo; ogni commento e' ben venuto.

poolish
250 gr farina 00 rinforzata (13.5% proteine, non so il w)
250 gr acqua
2-3 gr lievito di birra

lievitazione dentro il forno spento per circa 12 ore.
Temperatura ambiente circa 15-20 gradi
(direi piu' verso i 15, considerato che il poolish lievita durante la notte)


Impasto definitivo:

aggiungo 250 gr farina e 100 gr acqua salata
impasto a mano per 15-20 minuti
lascio lievitare per una ventina d'ore ed inforno
