Dopo un po' di foto.

Innanzitutto ho rinfrescato e controllato che raddoppiasse nel giro di tre ore (non รจ raddoppiato, stava esplodendo! :woot: )

Poi, prima di andare a letto, lo reso liquido mescolandolo a pari peso di acqua. In tutto, 250 gr di poolish.

Di mattina, ho messo nella planetaria e ho lavorato qualche minuto con la frusta a k. Ho aggiunto


700 gr di farina
370 gr di acqua di cui 50 per sciogliere il sale ( a 18 gradi)

Ho dato qualche slap and folding sul tagliere e poi ho messo in ciotola unta di olio per la puntatura. Tra un po', scadono le due ore e faccio uno dei due giri di pieghe previsti.
Poi, vi dico. :)

ore 17 e trenta, rinfrescato il lievito madre (190 gr di lievito, 90 di farina e 190 di manitoba). Messo al calduccio, a 26 gradi. Ci rivediamo tra tre ore. :)
