Io a dire il vero questo ASPARAGO lo trovo solo nei luoghi di cui ho parlato , e non ha niente a che vedere con il cugino sempre bianco ma spagnolo ......
Perchè sia un buon prodotto deve avere un calibro intorno ai 2 cm alla base e il costo si aggira attorno ai 10 euro al kilo
Per il resto si cucina esattamente come il verde

Molto semplicemente ho lavato e tagliato a rondelle di ca. mezzo centimetro gli asparagi, lasciando le punte intere. Gli asparagi bianchi andrebbero spellati (come le carote), ma i miei erano molto teneri e non serviva. Ho scaldato in una padella olio+burro, quindi aggiunti gli asparagi e un po' d'acqua. Ho salato, pepato (ho usato del pepe nero di Tellicherry, che è molto profumato) e messo il coperchio. Ho fatto andare a fuoco dolce per qualche minuto. Ho cotto delle tagliatelle di Campofilone, facendo finire la cottura in padella con gli asparagi aggiungendo del parmigiano (vacche bianche).
Molto buono, l'asparago bianco, rispetto al verde, ha un sapore più delicato e leggermente amarognolo.
