Come vi dicevo questa ricetta e' di tipo introduttivo, E' dedicata a chi si avvicina alla panificazione.
E' un impasto diretto semplice da eseguire e che comunque racchiude tutti i passi tipici per la produzione del pane.
Lo scopo principale e' insegnare a chi panifica per la prima volta i vari stadi della panificazione.
E' un impasto poco idratato e quindi facile anche da impastare a mano.


Ingredienti

Farina Forte 1kg
Sale 20gr
Burro 20gr
Lievito fresco 33gr
Acqua 580 grammi

Lavorazione
Unire sale alla farina
Unire il lievito e il burro
Aggiungere l'acqua e impastare fino a quando si ha un buon sviluppo del glutine
Temperatura finale dell'impasto 26gradi

Primary Fermentation: Far riposare per 1hrs, con un knock-back a 45 minuti
Scaling: Dividere in tre parti l'imapasto e formale delle pagnottine
Intermediate Proof: far riposare per 10 minuti
Shaping: dare la forma tipo swiss roll
Final Proof: 45-50 minuti
Baking: 30-35minuti, a 210 gradi.
