FICHI DEL CONVENTO

la ricetta proviene daun vecchio libro :Frutta Sottovetro della Fabbri Editori io ho effettuato alcune modifiche che scrivo in rosso
li ho fatti lo scorso anno e li rifarò con i prossimi fichi settembrini, quelli bianchi, piccoli e dolcissimi

fichi maturi e sodi 3 kg
zucchero 1,5 kg
gherigli di noci 300 gr
limoni 2
brandy 3 bicchierini
acqua poca

Lavare i fichi interi , asciugarli e metterli al sole per un'ora li ho semplicemente puliti con un canovaccio
Dividere i fichi a metà quindi introdurre al centro di ogni mezzo fico un quarto di gheriglio di noce poi richiuderlo ho lasciato i fichi interi con un coltellino affilato ho praticato un piccolo taglietto alla base del fico e vi ho introdotto il quarto di qheriglio di noce spingendolo un pò verso l'alto
collocare direttamente i fichi nel vaso sistemandoli ben accostati gli uni agli altri e disponendoli a strati. Su ogni strato spargere una manciata di zucchero, una scorzetta di limone e un poco di succo, infine il brandy.
Quando il vaso è pieno, (l'ultimo strato di fichi deve risultare di almeno un cm al disotto del bordo del vaso), aggiungere sui fichi qualche cucchiaiata di acqua bollita per avere un poco di sciroppo quando si consumeranno i fichi.
Chiudere i vasi e farli sterilizzare per 3/4 d'ora:
Conservare in luogo asciutto e buio.
