300 gr di kumquat
650 gr di acqua
350 gr di zucchero
un pezzetto di stecca di cannella

Lavare per bene i kumquat e sforacchiarli con uno stuzzicadenti.
Portare a bollore l'acqua, unire i kumquat e cuocerli per 5 minuti dalla ripresa del bollore. Scolarli e metterli da parte.
Aggiungere all'acqua lo zucchero e la cannella e portare a bollore. Unire i kumquat e lasciar riposare, coperto, per 24 ore.

Il giorno seguente scolare i kumquat, riportare a bollore lo sciroppo ed unire nuovamente i frutti. Lasciar riposare, coperto, per 24 ore. (Se si desidera che il profumo di cannella sia solo accennato a questo punto è possibile eliminarla).

Ripetere quest'ultimo passaggio (scolare-bollire-riunire-riposo di 24 ore) per altre 5 volte.

Per l'ultima volta (supponendo di iniziare di lunedì questo passaggio è da effettuare il lunedì seguente) scolare i kumquat, portare a bollore lo sciroppo, unirvi i kumquat e far riprendere il bollore. Disporre kumquat e sciroppo in vasetti ben puliti, chiuderli e lasciarli riposare capovolti finché sono freddi.
