Anche a me piacciono i pezzettoni, ma le mie albicocche sono biologiche e davvero brutte (ma molto buone!). La maggior parte aveva la buccia molto rovinata con macchie molto scure quasi nere... Quindi ho dovuto eliminare la buccia con questo attrezzo davvero utile che rende il lavoro molto veloce:

Il minipimer non lo uso mai per le marmellate. A seconda del tipo di frutta, a volte ne passo una parte col passa legumi col disco a fori medi e lascio dei pezzi interi...

@ Maestro: 105° è la temperatura consigliata sia in rete che su certi testi. Effettivamente funziona. A questo stadio di cottura risulta addensata e gelatificata al punto giusto senza che lo zucchero si sia troppo caramellato. Io faccio comunque per sicurezza in contemporanea anche la prova piattino.
Circa 3 kg di frutta + zucchero sono arrivate a temperatura in circa 30 minuti.
