Qualche variazione anche sulla pasta reale che dovrebbe essere fatta con 70% di farina di mandorla e 30% di farina di pistacchi; per dare intensità al verde si può utilizzare un po' di pasta di pistacchi che rende l'impasto più morbido e lavorabile: Così si evitano anche i coloranti.
