Ciao Elena, benvenuta su questo sito e benvenuta a Torino.
I tomini al verde sono tomini freschi, piccoli conditi con il bagnet verd, che è una salsa che qui usano per condire anche le acciughe. C'è poi il bagnet ross e la bagna caoda. Bagna vuol dire salsa, quindi bagnet verd sta per salsa verde, bagnet ross significa salsa rossa e bagna caoda vuol dire salsa calda. Quest'ultima è la più nota. Gustosissimo invece il verde come lo chiamano qui in italiano ( ma con la e molto aperta ). Uso la terza persona plurale perchè vivo a To da 5 anni e anche secondo me si mangia benissimo : senza offesa per gli emiliani, io venivo da bologna dove secondo me non sanno tanto cosa significhi mangiare bene, nonostante la fama di buongustai. Comunque bando alle ciance, ecco la ricetta del verde :
25 gr pane bianco
4 cucchiai di aceto rosso
prezzemolo tritato 3 cucchiai
aglio tritato 2 spicchi
1 acciuga sotto sale salata sciacquata e diliscata
1 tuorlo d'uovo sodo
olio evo 100 ml
sale
pepe bianco macinato al momento

Bagnare la mollica di pane nell'aceto che non deve essere molto forte, strizzarla e mettere assieme a tutti gli ingredienti (tranne l'olio)in un mortaio. Schiacciare bene e aggiungere l'olio a filo, sale e pepe a piacere, non usare per nessun motivo mixer elettrici.
La quantità d'olio può essere modificata tenendo presente che la salsa deve essere piuttosto morbida.Lasciare riposare per un'ora e utilizzare come accompagnamento di acciughe, tomini freschi, crostini.

Cmq fuori torino si mangia ancora meglio.....
