ho letto su wikipedia che le farine forti (fino a 350W) assorbono fino al 75% di acqua. la tibiona avendo una forza di 390W pensavo potessere assorbire il 66% di acqua senza problemi... ma forse è un ragionamento troppo semplificato.

per l'autolisi impasto solo acqua e farina per 3 minuti, lascio riposare 20 minuti,poi aggiungo sale e lievito e finisco impastando per altri 6-7 minuti.

io la butto lì. in tutte le mie prove l'unica costante è stata l'acqua; la prendo dal rubinetto. è possibile che dipenda da questo?

insomma il problema è sempre lo stesso; alla fine della lavorazione i miei impasti risultano molli e appiccicosi.
prendo ad esempio l'ultimo impasto che ho fatto:
-idratazione al 66%
-farina manitoba tibiona a W390 (1kg)
-impastato con una kitchenaid k5 (min 60 giri al min, max 220 giri al min)
il tempo di miscelazione si aggira sui 10 minuti di cui 3 a velocità bassa (circa 80 giri al minuto), segue riposo per autolisi per 20 minuti, finisco con 6 minuti a velocità moderata (circa 120 giri al minuto). ho provato con acqua fredda (15/16°), con acqua calda (25/26°), ho provato versando, durante la fase iniziale di miscelazione, l'acqua poco alla volta (660g di acqua inseriti durante i primi 3 minuti). niente da fare; finita la fase di miscelazione sono costretto ad aggiungere 100/150 gr. di farina.
