Però provo lo stesso a risponderti: dalla descrizione che hai dato potrebbe essere un problema di assenza di grasso, che non rende la pasta sufficientemente malleabile tanto che indurisce subito e sbriciola. Magari da te in questi giorni c'è poca umidità atmosferica e molto caldo? Anche questo potrebbe aver contribuito all'indurimento.
Sul fatto che possa indurire eccessivamente il rivestimento non credo, l'umidità della torta dovrebbe impedirlo, poi se la conservi in frigo magari non secca così velocemente.
Purtroppo non avendo mai provato a realizzare altre ricette non saprei cos'altro dirti. :-)
