Ma tant'è. Voglio una vita spericolata!

Ingredienti per circa 6 persone: 2 kg. di cozze, 150 gr. di pangrattato, 2 spicchi d'aglio, prezzemolo, olio d'oliva, aceto di vino, sale, pepe.

Preparazione: pulite il guscio delle cozze raschiandole bene sotto l'acqua corrente. Mettetele in un tegame a fuoco vivo finchè non si saranno aperte. Eliminate quelle che rimagono chiuse e tenete da parte il liquido che hanno prodotto in fondo al tegame. Mischiate in una scodella il pangrattato col prezzemolo e l'aglio tritati, un poco d'olio, sale e pepe. Bagnate l'impasto con parte del liquido delle cozze che avrete filtrato per eliminare eventuali residui solidi. Eliminate la metà del guscio delle cozze dove non è attaccato il mollusco mentre l'altro andrà coperto con l'impasto. Ponetele su una teglia, bagnate con un po' di olio e aceto e mettetele in forno (in modalità grill) finchè l'impasto non sarà dorato. Servitele in tavola con del limone e guarnite con prezzemolo fresco.
