Le pulisco bene, tolgo la testa, la lisca centrale e divido l'acciuga in due filetti; le passo bene bene sotto l'acqua corrente e si mettono a bagno in aceto.
Per aceto intendo l'aceto tradizionale, perchè con il balsamico non si otterrebbe la "cottura", e si perderebbe tutto il sapore di pesce fresco.
L'aceto deve essere delicato, a volte uso il bianco, a volte il rosso (se trovo quello giusto - quando vado in Francia faccio incetta...).
Se ho un aceto buono ma più forte, aggiungo un po' acqua.
Quanto le tengo a bagno ? Dipende dalle acciughe : se sono piccole bastano 2 ore, se sono più ciccione di ore ce ne vogliono anche 3.
Dopo questo "ammollo bisogna asciugarle su carta, sopra e sotto.
Poi ci vuole sale, olio evo buono,succo di limone (poco..una spruzzatina) peperoncino, prezzemolo e....io ci metto degli anelli di cipolla di tropea.
Meglio aspettare 2/3 ore per mangiarle.
Si finisce tutto il pane ....ahimè...
