Il sapore è delicato e ne sarebbe coperto. Il brodo stesso meglio sia leggero, vegetale, e non di carne.

Della pianta si raccolgono solo i germogli ovvero il ciuffetto in alto composto da 4/6 giovani foglie; le ho passate in padella con un goccio d'olio ed una cipollina rossa intera (compreso il verde) per un paio di minuti a fiamma vivace, giusto il tempo di sentirli scoppiettare e vederli appassire. Una volta intepiditi li ho aggiunti al composto di uova, latte, pecorino, sale e noce moscata per poi procedere alla cottoura delle frittatine monoporzione in un padellino antiaderente.

Il gusto è fresco e dolce, e forse nulla di speciale, ma l'idea procurarsi il cibo alla maniera "antica", prepararlo senza passar dal frigorifero e, perchè no, dalla cassa del supermercato, gli attribuisce un gusto ed una soddisfazione unica. :happy:
