Della bianca modenese, oggi sono rimasti poco centinaia di capi: la fortuna del Parmigiano Reggiano aveva infatti nei decenni scorsi convinto i produttori a sostituire le due razze autoctone la bianca modenese e la rossa reggiana) con quelle provenienti dall’Olanda.

La Provincia di Modena ha avviato con alcuni allevatori storici un progetto per il recupero di questa razza autoctona raggiungendo un primo importante risultato: nel caseificio Rosola di Zocca, sull’Appennino modenese, si ricavano forme di parmigiano di montagna fatte solo con il latte di bianca modenese e una delle cinque caldaie del caseificio, ben separata dalle altre, e’ stata dedicata alla produzione giornaliera di due forme. Al momento, la quantita’ di latte conferita non consente di aumentare la produzione ma con il recupero graduale della razza si arriverà ad aumentare anche la produzione di Parmigiano Reggiano e, in prospettiva, quando il numero dei capi lo permettera’, a sviluppare anche un progetto di valorizzazione sulle carne, che sono sapide e ben marezzate di grasso, adatte a cotture veloci.
