Ho trovato casualmente una vecchia ricetta di Gelo di melone bianco che per l'appunto, prevede l'utilizzo del melone dalla scorza gialla. Presto fatto e sformato

Ingredienti x 4
750 g circa di melone bianco 
50 g di amido di mais
50 g di zucchero
Preparazione
Privare il melone della buccia e frullare la polpa fino ad otterre un composto omogeneo; trasferirne mezzo litro in una casseruola, unire l'amido di mais e lo zucchero, mescolare finché quest'ultimo si sarà sciolto e cuocete a fuoco lento, per 2 minuti dal momento dell'ebollizione. Versare il composto ottenuto in 4 stampini da porzione, lasciare raffreddare e mettere in frigo per almeno 2 ore.

Considerazioni
Al momento dell'assaggio, delusione: al primo cucchiaino il gusto è poco gradevole e senza alcun accenno di melone. Tuttavia, il retrogusto riporta il sapore di melone e già al cucchiaino successivo il gusto migliora. APPELLO A TUTTI I SICILIANI NAVIGANTI
Mi chiedevo (1) se in Sicilia questo tipo di gelo è diffuso o se al contrario è una variazione sul tema ad opera di qualche chef del continente (poco rispettoso dell'intoccabilità delle ricette regionali);
(2) se il sapore poco ortodosso (come nel caso di quello preparato da me) dipende dalla cottura o dal tipo di melone impiegato.
