Quello di stasera (nonostante la foto) è il miglior fritto di calamari che abbia mai mangiato.
Seguendo tutti i consigli dei maestri, si puo' arrivare a questo:



Riassumendo: calamari freschissimi e tenuti nel ghiaccio tritato, farina freddissima, infarinatura poco per volta e solo un secondo prima del tuffo nell'olio, temperatura 200 gradi, tempo di cottura 40-50 secondi. Se ne fate tanti, potete tenerli in caldo nel forno (caldo ma spento).
